The trial is the interview
In Sydney nobody hires a barista off a résumé. They put you on the machine for a shift and watch. That shift is the whole interview, and it is decided in the first twenty minutes.
So that is what we train you for. Time on the machine until the movements belong to you and you are not thinking about them any more. Then you walk in and do the job.

Trial ready, fast. Espresso, milk texturing, and the drinks you will be asked for on day one. For people with a trial booked this week who need the essentials and need them now.
3 Hours · $180
Everything above, plus the pressure. Order after order, the way a real rush comes at you — speed, consistency, keeping your head. If you are starting from zero, this is the one that actually gets you ready.
What you will learn
- Dose, tamp and extraction technique
- Reading a shot and adjusting the grind
- Milk texturing and microfoam
- Flat white, latte, cappuccino, long black, piccolo, macchiato
- Bar workflow — speed, consistency, keeping order in a rush

- Taking orders and talking to customers
